Easy Stovetop Enchiladas
Normally I love to cook and bake. But three weeks ago I had a baby. Yep. We are on baby time now. We are lucky if we eat an actual dinner at all! And oftentimes I am trying to function with a baby attached to me. I love my ring sling, but I still feel a bit restricted. On top of that, we live in Phoenix, which means 100+ degree weather is right around the corner. Actually, last week it was over 100 degrees—blah! The last thing I want to do (or have time to do) is heat up the oven. My motto right now is quick and easy!
One of my husband’s favorite meals is Easy Stovetop Enchiladas. Lucky for me, it also happens to be one of the easiest recipes to make—plus, it does not require heating up the oven and only takes about 20-30 minutes to make. While I will admit it is not very “gourmet” (more like redneck), it is delicious!
